Berry Souffle

Ingredients:

  • 6 mugs to serve

  • 2 cups of berries (any kind will do)

  • ¼ cup of sugar

  • 1 Tbsp of custard powder

  • 7 egg whites

  • 50 grams of sugar

  • Sprinkle of icing sugar

  • Vanilla ice cream

     

Directions:

  • Preheat oven to 200 degrees

  • Line mugs with butter and place in fridge (repeat later)

  • Mix berries and sugar together to melt on stove

  • Mix custard powder and a bit of water until dissolved to add to berries

  • Add a spoonful of sugar and turn it around inside cups 

  • Blend the berry mix until chunky

  • Separate egg whites and whisk with sugar

  • Put egg whites in berry mix, a bit at a time

  • Pipe mixture into the buttered mugs and place in oven

  • Take souffle out of oven and dust with icing sugar on top

  • Place spoonful of ice cream mix (berries and vanilla) on top of souffle 

  • DONE!
